I love the cymbal at 0:24, just 1 beat before the start of the next 4 bars; it emphasises that one beat really well

That's an open hi-hat and yeah, hi-hats are very cool to use indeed!! Specially in jazz and swing where you can blend them in to the rhythm in unique and weird ways
